This position #60061303 is located at Maury Correctional Institution. Position performs first-line supervisory work in a close custody facility that also house medium custody inmates and provides supervision and custody of inmates in their assigned to work in a large-scale food service production within a correctional facility. Work required a dual role of custody and food production training. Employee provides supervision of inmate workers engaged in a variety of activities in food production including cooking, baking & serving. Work also includes, but is not limited to maintaining standards of sanitation in all areas of the kitchen; and proper food storage responsibilities. Employee is responsible for the quality of work performed by the inmates in an assigned area. Must be able to communicate verbally & in writing; comprehend/abide by verbal & written instructions; input/comprehend computer data; secure and maintain equipment; read/comprehend/calculate menus; observe sanitary food handling practices; understand food nutritional values; inventory/rotate stock; complete cpr; firearms & unarmed self-defense training; and work a varied schedule

Documented knowledge of large-scale food production and food service activities
Minimum Education and Experience Requirements
High school or General Educational Development (GED) diploma and three years of experience in institutional food preparation and food services, in management of a commercial food service operations, or as a Correctional Officer; or an equivalent combination of education and experience. Necessary Special Qualifications Must be eligible for certification by the North Carolina Criminal Justice Education & Training Standards Commission.
