DIETARY SUPERVISOR
JOB DESCRIPTION

The purpose of this position is to implement and maintain effective, efficient systems to operate the dietary department in an efficient manner, provide food service to residents in a cost-efficient manner to safely meet residents’ needs in compliance with federal, state and local requirements.
QUALIFICATIONS
o Kitchen/restaurant experience required.
o Long term care experience preferred.
o At least one (1) year managerial experience preferred but not required.
PROFESSIONAL REQUIREMENTS
o Experience in the various duties and governmental regulations necessary to manage a dietary department.
o Skilled at organizing various duties.
o Must be flexible and able to handle change easily and professionally.
o Must display a willingness to continue to study, learn and implement continuously changing state and federal regulations.

o Communicate with residents, families and staff in a professional and tactful manner.

PHYSICAL REQUIREMENTS OF JOB (with or without assistance):
Walking, reaching, bending, lifting, grasping, pushing and pulling, fine hand coordination, ability to hear and respond to pages, ability to understand and follow written and oral instructions and directions; ability to communicate with residents, families, personnel, vendors and consultants; ability to distinguish smells, tastes, and temperatures; and ability to remain calm under stress.
RESPONSIBILITIES
o Implement dietary food service policies and procedures to meet residents’ needs in compliance with federal, state and local regulations.
o Determine the personnel requirements for the dietary department and implement dietary policies and procedures. Develop and implement all work schedules for the dietary department.
o Interview and hire appropriate dietary individuals. Orient new associates to dietary duties. Lead in-service training programs for dietary associates.
o Supervise the entire operation of the dietary department.
o Supervise preparation of menus to meet residents’ dietary needs.
o Assess residents’ dietary needs and develop appropriate dietary plans in compliance with physicians’ orders.
o Perform simple arithmetic and units of measurement conversions used in food preparation.
o Plan diets and menus for review by the dietary consultant. Implement diets and menus approved by the consultant.
o Purchase or requisition food and supplies. Supervise the receiving and storage of food.
o Supervise food preparation and service. Plan food substitutions for residents who refuse or are unable to eat food served.
o Complete the assigned MDS section in a timely manner.
o Review residents’ dietary profile, assessment plan and plan of care for residents triggering a Q1 related to nutritional status and eating function to determine if there is a problem or concern that can be resolved, improved or addressed in a different manner to improve the resident’s nutritional status and eating function.
o Document and implement the dietary component of residents’ care plans. Document each resident’s progress toward care plan goals. Review and revise each residents care plan as necessary.
o Interview residents and determine specific dietary needs and preferences. Inform and educate residents regarding therapeutic diets.
o Monitor and assess residents’ weights.
o Maintain records of residents’ profiles, meal census, menus, diet cardex, diet roster, diets served and purchase records.
o Maintain file of standardized recipes. Maintain menus for required retention period.
o Be responsible for maintenance of personnel records. Be responsible for communicating pertinent information to dietary employees.
o Prepare work and cleaning schedules.
o Assume responsibility for compliance with sanitation requirements. Ensure proper maintenance of equipment.
o Maintain food and labor costs within the dietary budget.
o Work with administration and the Activity Department to plan menus and provide special foods for parties and/or other scheduled programs.
o Be responsible for the safety of residents under his/her dietary supervision. Observe all facility safety policies and procedures. Observe infection control procedures.
o Follow Residents’ Rights policies at all times.
o To perform other duties as requested by management.
