Title: Field Specialist
Salary: $55K-$70K (DOE)
Location: Santa Fe Springs, CA
Managing stores:
- Check the bar and/or sushi case properly presented
- Check if Chef’s are following HCAPP regulations
- Check the store inventory, ordering amount, and logs are properly taken care of
- Communicate with Chefs and solve the issue on the spot or if it’s complicated, report back to the Senior Director
- Communicate with store manager when issues arise and work with them to find the solutions to the issue
- Implement requests or/and order from the Senior Director
- Upkeep equipment and request repairs when necessary
- Ensure staff hours are appropriate for business volume.
- Ensure that inventories are taken on a weekly basis so that goods are being ordered according to business needs
- Ensure all logs completed
- Aware of new sushi menu, new pricing available at competitor’s sushi case/bar
- Fill in as a sushi chef at the store-if necessary (training will be provided)
Administrative and Training:
- Search, interviewing and hiring new Chef
- Oversee sales figures at each store
- Create bi-weekly work schedule for the Chef
- Coordinate and report Chef’s day off’s with Payroll
- Able to create worksheet on excel and use Microsoft word for documents
- Training, coaching, and counseling existing Chef’s for their concerns
- Make sure all new and existing Chef are practicing the way of making sushi
- Train new chefs (sushi making skills and customer service)
Education:
- Associate Degree preferred
- Food Handler Manager level preferred
- Certificate from a culinary school for Japanese food or sushi is a plus.
Experience:
- 5+ experience as a chef in food industry (Sushi) preferred
- 3+ years training chef experience preferred
- Understanding of HCAPP regulations
- Good knowledge of various sushi types and sushi-rolling techniques
- Customer service oriented required
- Ability to thrive in a fast-paced environment
- Passion for food and cooking techniques
- Strong leadership qualities
Technical Skills:
- Knowledge on teaching, coaching and managing food prep activities to new and existing Chef. Coordinate with chef to ensure proper cooking, considering special requests and food allergies.
Non-Technical Skills:
- Strong oral and written communications skills. Ability to exercise good judgement. Valid driver’s license.
