THE JOB

Stone Brewing is searching for an efficient, reliable and passionate Line Cook to join our Stone Brewing World Bistro & Gardens team. This person will be responsible for accurately and efficiently cooking meats, fish, vegetables, and other hot food products as well as preparing and portioning food products prior to cooking. They will also assist in the areas of food and final plate preparation including the plating and garnishing of cooked items and preparing appropriate garnishes for all hot menu item plates.

Essential Duties and Responsibilities include the following. Other duties may be assigned.

  • Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment. The expectation for this role is being able to fully master a minimum of three stations.
  • Assumes 100% responsibility for quality of products served.
  • Follows recipes correctly.
  • Responsible for checking line and line cooks prep and temping coolers, and food before and or during a shift.
  • Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
  • Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
  • Portions food products prior to cooking according to standard portion sizes and recipe specifications.
  • Maintains a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, wok, sauté burners, convection oven, flat top range and refrigeration equipment.
  • Follows proper plate presentation and garnish set up for all dishes.
  • Handles, stores and rotates all products properly.
  • Assists in food prep assignments
  • Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.
  • Attends all scheduled employee meetings and brings suggestions for improvement.
  • Follow all safety policies, procedures and best practices at all times.

Qualifications

  • Education: High School Diploma or GED.
  • Experience: At least 3 years of related experience and/or training in high volume kitchen preparation and cooking.
  • Computer Skills: Email
  • Certificates, Licenses, Registrations: Must have a current San Diego County Food Handlers card, issued by the city of San Diego
  • Language Skills: Must be able to effectively communicate in English, both verbally and written.
  • Travel Requirements: Reliable transportation is necessary
